Ingredients
4 cups fresh raspberries or blackberries, divided
4 cups fresh raspberries or blackberries, divided
½ cup granulated sugar
4 tsp lemon juice
1 tbsp cornstarch
1 cup mascarpone cheese
¼ cup icing sugar
2 tsp vanilla extract
1 cup whipping cream

Directions

Step 1: Blend 1½ cups of the raspberries or blackberries with the lemon juice and granulated sugar.

Step 2: Transfer the mixture to a saucepan and bring to a boil over medium-high heat, stirring frequently.

Step 3: Cook for about 5 minutes, or until the mixture has reduced slightly.

Step 4: In a small bowl, whisk together the cornstarch and water. Stir into the berry mixture.

Step 5: Bring back to a boil and cook for 1 minute, stirring constantly, until thickened to a jam-like consistency.

Step 6: Transfer to a bowl, cover, and refrigerate until completely cooled.

Shortcut: Use your favourite store-bought berry jam instead.

Step 7: In a medium bowl, whisk together the mascarpone cheese, icing sugar, and vanilla extract until smooth.

Step 8: In a separate bowl, beat the whipping cream until stiff peaks form.

Step 9: Gently fold the whipped cream into the mascarpone mixture until fully combined.

Step 10: Add a layer of crumbled cake, granola, graham crackers, or cookies to the bottom of six small glasses or jars.

Step 11: Spoon in a layer of mascarpone cream.

Step 12: Add a layer of berry jam.

Step 13: Repeat with another layer of mascarpone cream.

Step 14: Top with the remaining fresh berries.

Step 15: Dust with icing sugar, if desired.
